Kona Cafe: Tonga Toast Recipe
Kona Cafe at Disney’s Polynesian Resort is best known for its Tonga Toast. They take a big hunk of sourdough bread, stuff it full of bananas, dip it in batter, lightly fry it until it’s golden brown then roll it in a mixture of cinnamon sugar. Think French toast to the extreme. And now you can enjoy this insanely delicious breakfast dish at home following this easy recipe. Enjoy!!

Tonga Toast *serves 2
Cinnamon-Sugar Ingredients: 3/4 granulated sugar 2 teaspoons ground cinnamon
Cinnamon-Sugar Directions: Mix cinnamon and sugar in a shallow dish with a spoon until well blended. Set aside.
Batter Ingredients: 4 whole eggs 1 1/3 cups milk 1/4 teaspoon ground cinnamon 1 tablespoon granulated sugar
Batter Directions: Whisk all ingredients together in a large bowl. Set aside.
Tonga Toast Ingredients: 2 thick slices of sourdough bread, cut 3-inches thick 1 banana canola oil, for frying
Tonga Toast Directions: Heat 2 inches of canola oil in a deep frying pan until 350 degrees (or sizzles when a crumb of bread is dropped into it). Using a sharp knife, cut a 2-inch pocket in one side of each bread slice. Slice each unpeeled banana in half crosswise, then slice again lengthwise. You should now have 4 slices of banana. Remove the peels and stuff two slices into each pocket of bread. Dip one of the stuffed bread slices into the batter and let it soak up liquid for a few seconds, turning to coat all sides. Place in hot oil and fry on both sides until lightly browned, about 3 minutes per side. Drain on paper towel-lined plate. Immediately place in the cinnamon-sugar mixture and coat all sides. Top with butter and syrup or fresh fruit and whipped cream. Serve warm with a side of crispy bacon or breakfast ham. Yum!
