2 cups sweet potatoes, diced
2 tablespoons butter
4 tablespoons heavy cream
2 teaspoons brown sugar
3 tablespoons Jim Beam Bourbon pinch of salt & pepper
Directions: Steam sweet potatoes until well cooked. While potatoes are cooking, place butter, sugar, cream and bourbon in a saucepan and heat on medium low, stirring constantly. When potatoes are done, place them in a 350-degree oven for 5 minutes to get some of the moisture out. Remove from oven and place in an electric mixer and whip. Slowly add in the cream mixture. Mix well until potatoes are creamy. Season with salt & pepper to taste.
